Duga crna dlaka i prekrasno ružićasto meso odlikuju fajfericu, izvornu hrvatsku pasminu svinje koju službeno zovu crna slavonska. Zbog uzgoja na otvorenom i prirodne ispaše posebno je pogodna za proizvodnju kulena, kobasica, šunke, čvaraka i slanine, specijaliteta uobičajenih za područje istočne Hrvatske.
Nastala je u 19. stoljeću na imanju grofa Dragutina Karla Leopolda Pfeiffera u Orlovnjaku u okolici Osijeka. Ovaj napredni poljoprivrednik, po kojem je crna slavonska svinja i dobila popularno ime, tražio je pasminu koja će se moći uzgajati na otvorenom u Slavoniji gdje su zimi temperature debelo ispod nule, a ljeti i do 40 stupnjeva. S uvezenim pasminama je križao mangulicu, panonsku svinju “rudlavu” poput ovce koja dobro podnosi hladnoću. Dobio je današnju fajfericu koju i dalje od hladnoće čuva dužina dlake, a njezina crna boja odbija vrućinu. Zato joj za uzgoj treba samo dobra poljoprivredna površina za ispašu, ponešto kukuruza za dohranu zimi te nadstrešnica pod koju se skrivaju krmače kad se prase.
Ostavio nam je Pfeiffer u svojim svinjama i odlično meso. U očišćenoj polovici crne slavonske svinje je oko 40 posto mesa, što je poprilično izdašno, a posebna mu je i kvaliteta. Ima četiri do osam posto unutarmišićne masti i dobro veže vodu. Zbog toga, kao i zbog enzima tartufa koje jede rujući među slavonskim hrastovima, meso joj je ukusnije pa su bolji i suhomesnati proizvodi napravljeni od njega. Povoljniji je isadržaj masnih kiselina u unutarmišićnoj masti nego kod takozvanih plemenitih pasmina. Zato se i govori da ne stvara loš kolesterol nego ga, štoviše, smanjuje.
Priprema mesa je slična pripremi mesa ostalih pasmina svinje, samo može zahtijevati malo više vremena. Ipak su fajferice najveći dio života provele u šumi.
Program očuvanja crne slavonske svinje započeo je 1996. godine, a do 2022. se planira povećanje broja rasplodnih krmača i nerastova crne slavonske svinje do 10.000 rasplodnih grla. Pogodna je za obiteljska poljoprivredna gospodarstva jer je i turistička atrakcija. Osim toga, odrezak ili narezak prodan kod kuće na stolu je brz, izdašan i siguran prihod uzgajivaču, a gostu će pružiti poseban užitak.
